Add nutrients to a grilled cheese sandwich – and add fruit to your kids’ lunches – by putting apples ON the sandwich! This sweet-and-cheesy apple panini can be served warm or made in the morning and packed for lunch. And, pressed sandwiches are easier for little mouths.
8 slices multi-grain bread
2 teaspoons yellow mustard
4 1-ounce slices of reduced-fat cheddar cheese
4 slices apples, peeled and cored
1 tablespoon olive oil or cooking spray
Brush one side of the slices of bread with olive oil and a pastry brush, or spray the slices of bread with cooking spray. Spread mustard on the other side of the slice of bread. Lay one slice of bread on a panini press or pan (mustard side up). Layer with cheese and sliced apples. Top with second slice of bread, with the olive oil side on the outside. Cook both sides if using a pan.
